Sometimes people get in a rut and cook the same recipe every time they make a certain dish.  For example, green bean casserole, jambalaya or red beans.  Boring, you can change those dishes up a little, it’s not against the law.  I met Charlotte Bravata Balfour this weekend at Juniors steak cook-off.  She gave me a new recipe for BBQ shrimp and here it is.

 

5lbs head on shrimp

1 large bell pepper chopped

1 large onion chopped

3 stalks celery chopped

12 cloves garlic chopped fine

½ stick butter

2/3 cup olive oil

2 12oz beers your choice

¼ cup fresh green onion chopped

2 tbls fresh parsley chopped

¼ cup Cajun seasoning

4 lemons, ends cut off for squeezing and middle cut in 4 pieces

1 loaf lightly toasted French bread

In a large pot saute bell pepper, onion and celery in oil and butter over medium heat. When bell pepper darkens –add garlic. After 2 minutes add shrimp cook until just turning pink.  Add green onions parsley, seasoning, beer, lemon and juice.  Bring to a slow boil then cook on low and simmer for 20-30 minutes (depending on size of shrimp). Serve with French bread
